Will you be able to use the camera connection kit and plug the camera and use it for chatting like in messenger? I know there are apps that you can use the iphone and make it work like a camera with the Ipad.

That is *exactly* what the Camera Connection Kit was designed for. You get both possibilities: take the SD card from the camera and plug it directly into the Kit, or take the USB camera cable, and plug IT directly into the Kit.
