What I have been learning (mostly by experience) is that if I'm about to
work in an app where any data I enter is something I don't want to lose
if the app hangs, I double-click the Home button on the bottom front and
when the row of recent apps appears, I hold one until they all start to
wiggle and then I press the minus sign for each one except the app I
want to work in, should it be present. Then I press the Home button
again to get the one remaining icon to stop wiggling and then I press
that icon to bring the app up to work with. If I hadn't already started
the app I want to work in, the first Home button press after I've
removed all the recent icons will bring me back to the home screen.
Then I start the app and I've found that has removed the lockups. Your
mileage may vary because it seems there are just some super-fussy apps,
and perhaps you might do well to do a complete power down as well before
starting the app with the data you can't afford to lose.

I'm hoping that with a future upgrade to the iOS that this sort of
problem will be significantly reduced or possibly even eliminated. It's
the one frustrating thing about the iPad which makes it not quite the
perfect device for me.
