A number of the apps I use cause messages from Apple to pop up stating that these apps will slow down my iPad and need to be updated; including a Google app. They all have the most recent update for each particular app. A couple of the apps crash after being used for awhile.

In general, my advice is look at Apple's list of compatible devices for a new OS upgrade, and if your device is at the very bottom of the list of "compatible" devices, don't upgrade — you are much more likely to have problems.

I have looked at the iPad Pro in both sizes the smaller one being more realistic for my finances. The iPad Air 2 is even more affordable. I am not a power user.

Is there much real world difference between the Pro and the Air?

Yes.
At present the 9.7" iPad Pro is the best tablet anyone's ever made.

I agree with Jim's advice.  However, some older apps will continue to display the same message that you are now seeing both on the Pro models and the Air, but I haven't experienced any app crashes on my iPad Pros of either size.  My adult daughter has my old Air and hasn't mentioned any app crashes on it.
