Had an original iPad but when the 3rd Gen came out bought one. Upgraded to 64GB and to cellular data model, but the best part of the upgrade was the the screen resolution. Beautiful. I would recommend at least a 3rd Gen and then depending on you need for speed, space, etc. would consider 4 or Air. Difference in price a factor as sometimes only $100-150 can give you a big step up.

You've gotten some good replies -- I think that one factor in your
decision should be a careful consideration of what you use the iPad for.
If you read graphic-intensive books on it (I use it a lot every day
for reading scanned PDF files of sheet music) then you should consider
at least an iPad4 because of the big increase in CPU speed and graphics
co-processor speed over the previous versions.

If you mainly use it for text-based things such as e-mails and reading
novels and such, then an iPad2 might be just the ticket for you.

We have that dilemma too, particularly on my wife's 64G iPad3. However, if you're prepared to have an additional small box when you need more storage, you can buy one of several "wifi-drives", e.g.., "Airstash", Seagate Satellite, "Apotop", etc..

Such devices either incorporate storage, or need you to add your own, e.g.., HD, memory stick, SD card, etc. 

Having such a device means you can store files, e.g.., music, photo's, movies, externally on the device, & keep applications on your iPad.

I particularly like Airstash, as it's very fast to become accessible, & uses webdav, so we can backup our Pages  & Numbers doc's on it without need for a mac or Cloud. It does of course mean to use it, your app's must support webdav.
