When you press and hold an app icon, ALL the apps start to jiggle and show an x in the corner. Be sure to look at the apps in the bottom trey. Those are the open apps. Click the x to shut them down. When you're done, press the Home button and the jiggling will stop.

when i do that ALL my apps display, whether i used them recently or not --- and even if i've never used them at all.
