Had a recent kerfuffle over editing my iCloud account settings;
it would probably be useful to recount them to group.
I wanted to remove an e-mail address this month, and so I am changing the user info where that address appears.
On my Mac, went to the iCloud settings, which took me to the iCloud Web site, it was simple.
I synched iPad and iPhone, and later went to my phone to make sure Keychain was working.
It was not.
I could open iCloud and try to change account and password; it would let me change only password.
Here was the mistake; Apple protects the portable devices by preventing a user from entering a new account in iCloud; to them, them is tantamount to allowing any new user into your phone.

What I SHOULD have done is simple: sign out of iCloud on each device BEFORE changing it.
Then, when I sign back in, it would have allowed me to enter the new address and passwords.
The larger lesson: before making changes, consider -all- the devices and locations that something functions in.
