A friend had a bad accident which resulted in both her arms broken. I got her this stand:
You'll need to set it up by clamping it to a table, but once set up, it is extremely stable. This way she would not need to hold it. Also, using a stylus may be easier for her. For emails she could use the text to speech function. Not sure if that would work on text messages.
