The screen shot shows the break between emails in the thread. I want separate emails.

Okay. Some changes take getting used to.

I dislike the new Mail app.  It's too much like Mac Mail which I didn't like.

Remember it is still in beta.

Sure, it retrieves email just fine but it attaches replies, like a digest, which I dislike immensely.

Settings –> Mail –> Complete Threads

It use to be I would tap a message and I'd get a list of all the replies to this original message.

I still get that, if I understand your meaning.

I could also save the one reply that had instructions in it (if there was one). Not anymore, from what I've been noticing.

No problem doing that.

 Just One long email.

I sounds like you somehow got switched to Digest Mode.
