I've set iTunes to not sync *any* device on hookup
[Edit/Preferences/Devices]. I always have to click on apply or sync after
I've made my choices in the various tabs.

You can sync several picture folders from your pc to your device; you make
the choices in the 'photos' tab -- chose the folder location, check
'selected folders' & then check which ones you want to sync. But all the
chosen-folders have to be within the same single folder you chose at the top
of the screen and the choice only goes one level deep.

But then those pix wouldn't be in the 'photos' built-in-app would they?
Just as PDFs etc go into specific apps that you choose?
This may not bother you. I like the simplicity of using the built-in.
I don't do much with pictures, though.
