If this is what's bothering you tap on the Settings icon, then General, go to Date and Time. Change it there.

Tap clock, tap world clock. See all the clocks? Click on Add. Add the major city near you.

One reason I forget some of the things I HAVE learned is that I just get tired of looking and not being able to do anything with the very expensive device that I can't really use,

iOS is not intuitive, although others will say it is. If anything is new to you, in this case the features, layout, workflow, it can rarely be intuitive.

I suggest that when you seek to lean a task, whether it be "How to import a file into Goodreader" as one example, Google or YouTube it. After a while, it will feel more intuitive as you will get used to the iOS workflow. For an app, Google or YouTube that too, there are many intros online that can help the understanding of the workflow
